Pork Chops with Roasted Potatoes and Onions


This recipe is simple and easy to do.  It's something we came up with based on the seasoning/spices we love:  thyme, rosemary, garlic (enough to kill a vampire).

Ingredients

  • 2 pork chops
  • Red and white small potatoes - we find the mix in Little Potato Company's Dynamic Duo to be the best
  • 1 large or 2 small onions
  • rosemary
  • thyme
  • garlic powder - we use what you get at Costco
Step 1 - Rinse the pork chops and place on a plate.  I do not dry them as it allows the seasonings to stick to the pork a bit easier  Put seasoning on both sides.  1 teaspoon of rosemary, thyme, and garlic on each side.  Put the pork chops together, wrap snugly in plastic wrap and refrigerate for 1-4 hours (you don't have to refrigerate, but it does allow the seasonings to soak in to the meat).  Pictures below.




Step 2 - Cube the potatoes and onions.  We have a vegetable chopper that is amazing at doing this and gives you consistent size of your vegetables so that you get even cooking.  If you don't have one of these, get one.  It's a life safer










Step 3 - Take a large piece of foil and spray it with non-stick spray.  Place the potatoes and onions on it, drizzle with Olive Oil, and put 2 teaspoons of thyme, rosemary, and garlic on them.  Fold the foil and make sure it's sealed to "steam" the vegetables.  Place on a grill at 450 degrees for 25 minutes (coordinates with the cook time of the pork)





Step 4 - At the 25 minute mark, unwrap the pork chops and place them on the grill, continuing at 450 degrees.  Cook them for 7 minutes on each side.  When they are done, remove everything from the grill and serve
