Pork Chops with Roasted Potatoes and Onions This recipe is simple and easy to do. It's something we came up with based on the seasoning/spices we love: thyme, rosemary, garlic (enough to kill a vampire). Ingredients 2 pork chops Red and white small potatoes - we find the mix in Little Potato Company's Dynamic Duo to be the best 1 large or 2 small onions rosemary thyme garlic powder - we use what you get at Costco Step 1 - Rinse the pork chops and place on a plate. I do not dry them as it allows the seasonings to stick to the pork a bit easier Put seasoning on both sides. 1 teaspoon of rosemary, thyme, and garlic on each side. Put the pork chops together, wrap snugly in plastic wrap and refrigerate for 1-4 hours (you don't have to refrigerate, but it does allow the seasonings to soak in to the meat). Pictures below. Chicken Fajita "Pinwheels" - serves 2 people Ingredients: 2 Chicken breasts 1 Jalapeno 2 Roma Tomatoes 1 Bell Pepper (red, yellow, or orange) 1 Red Onion 3 Tablespoons of taco seasoning with a little extra to sprinkle on top (more on that later) 1 Tablespoon of garlic 2 Limes Cooking Gadgets: Sharp knife for cutting vegetables Sharp knife for butterflying chicken breasts Plastic wrap Vegetable Chopper Cutting board Zester Here Goes: The first step of the process is to chop up the vegetables. I usually cut the vegetables into large chunks and then put them through our vegetable chopper with the smaller diced blades. It gives you uniform size pieces, which makes sure everything is cooked evenly. You can do this with the tomatoes, onion, and bell pepper. I used yellow this time. If you're like me, you get really tied of using recipes on-line. Whether it be Pinterest or a simple Google search, you end up with endless pop-ups, videos, etc. Also, you have to read about why the person posting the recipe loves the recipe, how it has impacted their life, etc. (LOL). You can often hit the "Jump To Recipe" button, and it takes you to the recipe, but you end up seeing more ads, pop-ups, videos, etc. Last week, I made a recipe for a healthier version of waffles, and I kept having to refresh my browser so that I could see the recipe. It was frustrating to say the least. As I talked to a friend, she had a similar frustration. "I always hit the jump to recipe" button. I post a lot of my food on Facebook (without the recipe), and she said "You should really create videos of them".
